Many of you mom’s out there with littles under 5 may know the blessings and woes of the WIC program. I’m not sure about other states but in Arkansas {in the two towns I’ve participated in} it’s a big run around. I mean you really gotta need the help to do all the waiting, meetings, and check-ups in the office as well as the inevitable mishaps, stares, and assumptions made at the check out. After you get through all of that the monetary savings and relief this program brings totally outweighs all of the hassle.
Now that you have the food home, what do you do with it? I mean, its all great stuff but I often have trouble finding good recipes where you use mainly the items they provide so I’m not still spending crazy amounts of money on ingredients to make a meal. Then, if I don’t quickly figure out how to use these items they go bad in the fridge or pantry. Anyone else out there deal with this?
Today I want to share a breakfast meal my kids love and only takes 1-3 ingredients that WIC doesn’t provide but that you likely have in your pantry.

Serve with juice and some fruit- that adds two more WIC item to use 😉
I hope these two recipes help you in being a good steward of your WIC items or just give you a new idea to add to your menu. We like having these for lunch or dinner!
BTW: Both of these items can be prepared a head and reheated. If you like toasty french toast, just pop them in the toaster. For a softer version, reheat in the microwave.
