Growing up, we liked to play games. My folks would regularly host card games with their friends. My favorite games were board games. Monopoly, LIFE, Scrabble, Connect Four (not a board game, but a favorite!), and others. When my folks come to visit, we all look forward to several rounds of Mexican Train.
Playing games is a great way to not only pass the time, but to be entertained and get to know one another. There’s something about being absorbed in a game that allows you to let you guard down a bit and be more personal.
Games today are changing, just as most everything in life. We recently had the opportunity to preview Hasbro’s new game channel via the XBox 360. The very first game we tried? Monopoly, of course!

Monopoly can be a rather long game. In a small home, this can be burdensome. We play board games on the kitchen table. If it’s supper time, we either have to rush through the game, put it away unfinished, or make supper wait. With the online game, we can save where we are, go make supper, and come back to the game. That is a HUGE plus! I find that this ability to pause the game also helps in this long one for those with shorter attention spans. Sometimes, you need a break and want to go walk around outside for a bit of sunshine.
When we are ready to begin the great Monopoly marathon, we like to make several snack foods to enjoy while playing. Since we are eating low-carb, it’s no longer easy to just grab a bag of snacks and play. There is a bit more planning involved. But, all of the recipes I’m going to share with you can be mixed up and in the oven in a matter of 15 minutes, then baked for 20 minutes. Just over a half an hour, you’re ready to go with healthy low-carb snacks and your controller in hand!

Sausage and Cream Cheese Stuffed Jalapenos

Sausage Cream Cheese Dip

Sausage and Cream Cheese Stuffed Jalapenos

Ingredients
- 1 pound sausage (mild to hot, you decide!)
- 8 oz block cream cheese, room temperature
- ½ cup shredded cheddar cheese
- 2 TB mayonnaise
- 8 jalapenos
Instructions
- Preheat oven to 400*
- Crumble and fry sausage until thoroughly cooked and browned.
- Mix cream cheese, cheddar cheese, and mayonnaise in a bowl. Stir in the sausage.
- Slice jalapenos in half, removing seeds. Take care to not touch your face or eyes while handling jalapenos. Use gloves if desired.
- Pack the cream cheese mixture into jalapeno halves.
- Place on a greased baking sheet.
- Bake 15 minutes, or until done.

Chicken Bites

Enjoy these bite-sized kicked up chicken for your next party!
Ingredients
- 4 boneless, skinless chicken breasts
- 3 TB mayonnaise
- 1 TB Kick'n Chicken seasoning
- 2 TB Panko bread crumbs
- Salt and pepper
Instructions
- Preheat oven to 400*
- Trim any fat from chicken, slice in half lengthwise, then chop into bite-sized chunks.
- Put the chicken into a bowl, spoon in the mayonnaise, Kick'n Chicken seasoning, and Panko. Mix to combine.
- Place chicken bites onto a greased pan. Sprinkle with salt & pepper.
- Bake for 15 minutes, or until cooked through and browned, shaking the pan every 5 minutes or so, to turn the pieces.

Low Carb Coleslaw

Ingredients
- ¼ head cabbage
- 4 TB mayonnaise
- 1 dropper-full Nu Naturals stevia
- 1 TB vinegar
- ¼ ts salt
- ½ ts pepper
Instructions
- Chop cabbage finely.
- Mix together mayonnaise, stevia, vinegar, salt, and pepper. Taste to check for tartness/sweetness. If not quite to your liking, add a bit more stevia or vinegar to achieve your desired taste.
- Combine cabbage with mayonnaise mixture.
- Allow to sit for the flavors to combine for 20 minutes or more.

Sausage Cream Cheese Dip

Serve this low carb party dip with sliced cucumbers, zucchini, and bell peppers! Or just eat it off the spoon!
Ingredients
- 1 pound sausage (hot to mild- your choice!)
- 8 oz block cream cheese, room temperature
- 2 TB mayonnaise
- 1/2 cup shredded cheddar cheese
- 2 slices smoked Provolone cheese
Instructions
- Preheat oven to 400*
- Cook and crumble sausage until browned.
- Mix together cream cheese, mayonnaise, and cheddar cheese. Stir in sausage.
- Pour into a greased casserole dish.
- Top with Provolone cheese.
- Bake 15 minutes or until bubbly and cheese is golden.
- Serve with sliced cucumbers, zucchini, and bell peppers for dipping.
