This Broccoli Bacon Salad is perfect for summer days. It’s quick to make, transportable, and yummy!
Everything is better with bacon.
Including, in my opinion, a good summer broccoli salad. Especially when it’s covered in a “magic” creamy honey balsamic dressing. My mouth is already watering just thinking about it.
When you have an easy recipe that only really *needs* three things, it’s also really easy to use up whatever random veggies you have hanging around in your refrigerator. All you *need* is broccoli, bacon, and of course–the “magic sauce.”
Easy “What’s in the Kitchen?” Broccoli Bacon Salad:
Step 1: Gather your ingredients. Look around in your fridge and decide what you want to throw in your salad.
I like to use green onions if I have them, but red or yellow will also work. I also like using yellow bell peppers. Today I decided to throw some purple cabbage in because I had some that needed to be used. I could easily see shredded carrots or chopped cucumber in this salad, too.
Step 2: Chop your veggies and cooked bacon into a large mixing bowl. You need 7 – 8 cups of “stuff” in your bowl before you add the dressing.
Start with one large or two smaller heads of broccoli. Mine gave me about three cups of bite-size pieces, maybe a little more. Broccoli should definitely be the star of the salad.
Step 3:Mix well. You can eat it right away or refrigerate for a couple of hours first. The dressing gets better after it sits, but I can’t ever wait that long.
Of course, the bacon will get softer the longer it sits in the dressing, but this salad is even great as leftovers the next day.
It’s that easy! And so yummy. And the “magic sauce” is easy, too.
Whisk into a bowl: 1/2 cup miracle whip, 3 TBSP balsamic vinegar, 2 TBSP honey, and salt and pepper to taste. It doesn’t look like much but it tastes so good – tangy and sweet and delicious.
