Fresh, homemade guacamole is a simple to prepare dish that you can tailor to your taste. Add it to your next Mexican dish!

Until recently, I did not care for guacamole. As much as I love Mexican food, I’d ask the server to leave it off my plate. It just wasn’t something I cared to eat.
My daughter, Rebecca, on the other hand, LOVES guacamole. She asked me to make her a batch one day.
After making it myself, I realized why I don’t care for most restaurant versions of guacamole, it was the cilantro. Many restaurants add way too much cilantro to their guacamole.
I’m not a huge cilantro fan, so being able to add just enough to my homemade version means I now add a healthy serving of this yumminess to my Mexican meals such as Chicken Enchiladas and Chicken Fajita Salad.
Easy Homemade Guacamole recipe

Guacamole is a quick side dish to make! Serve it with chips or on the side of your favorite dish!
Ingredients
- 2 avocados
- 1/2 recipe Pico de Gallo
- 1 ts Lemon juice
- Salt
- Pepper
- 1 ts Cilantro (to taste, if you love cilantro, add more!)
Instructions
- Mash avocados into a bowl.
- Mix in remaining ingredients.
- Place plastic wrap directly onto the surface of the guacamole.
- Refrigerate an hour or so.

I don’t like guacamole but it’s not the cilantro but another ingredient – the avocado : ) However, most of my family loves it so thanks for sharing!
It took me a while to grow to love this. I don’t know about avocados in any other form, but this I like.

Yum! I love guacamole but have never tried making it. My sister makes it with peas (which for some reason sounds disgusting to me even though I like peas). I think I’ll have to try this – sounds easy enough! Thanks for sharing!

Mmmm, I have all these ingredients at the moment so might have to try this with our enchiladas tomorrow night. I went off avocados completely after eating them all the time in Chile, but now I am getting fond of them again.

I honestly don’t know if I have ever actually tried guacamole. I think it’s a combination of the color and that I didn’t really know what was in it. Now, however, after seeing your recipe, I will definitely be trying some at the next opportunity. Thanks for sharing!!
