Two superfoods that we enjoy regularly are salmon and broccoli. These recipes are so versatile and easy to prepare. Change up your menu by adding one or more of these four recipes!

I’d like to share four of my favorite recipes with you. They are all easy to make, but are tasty as well as healthy!


These salmon recipes are show-stoppers but are so very easy to make.
The side dishes of Broccoli Jasmine Rice and Broccoli Slaw are perfect compliments to the Herb Crusted Salmon and Maple Lemon Salmon.
You can wow your guests with these superfoods! Mix and match the main dish with the broccoli side dishes for a complete meal in no time.
To save money and time, I always shop at Sam’s Club for salmon and broccoli. The large pieces of salmon are perfect for our family.
You can make both of the salmon dishes that I share below with ONE large package of salmon.
Buying the chopped broccoli from the fresh produce section is a time-saver on busy nights. (It’s also great to have on hand for a simple steamed broccoli side dish- top with a bit of butter, salt, and pepper, and YUM!)


Now, onto the recipes! Print these off, head to Sam’s Club to stock up, and be prepared for supper this week.
Herb Crusted Salmon

Enjoy this super-food, salmon, with a simple herb crust for your next meal!
Ingredients
- 2 pounds salmon, cut into ⅓ pound filets
- 2 quarts lukewarm water
- 5 Tablespoons salt
- ½ cup Panko bread crumbs
- 2 Tablespoons butter
- ¼ cup grated Parmesan cheese
- 1 teaspoon dried parsley
- 1-1/2 Tablespoons mayonnaise
- 1-1/2 Tablespoons sour cream
- 1 Tablespoon yellow mustard
- ¼ teaspoon dried thyme
- ¼ teaspoon dried rosemary
- ¼ cup shredded Parmesan cheese
Instructions
- Heat oven to 350*F
- To begin, make a brine by combining lukewarm water and salt, then add salmon filets. Brine for 15 minutes.
- Toast the panko bread crumbs in butter until light golden brown.
- Combine the toasted bread crumbs with grated Parmesan cheese and parsley. Set aside.
- Stir together the mayonnaise, sour cream, and yellow mustard. Mix in thyme, rosemary, and shredded Parmesan.
- Remove salmon fillets from brine, dry thoroughly.
- Place on a foiled-lined rack on a baking sheet.
- Coat the top of each filet with mayonnaise mixture.
- Add the crumb mixture to cover the mayonnaise mixture.
- Bake 20 minutes, or until salmon is done.

Maple Lemon Salmon

Lemon gives a bright note to this salmon dish!
Ingredients
- 2 pounds salmon, cut into ⅓ pound fillets
- 2 quarts lukewarm water
- 5 Tablespoons salt
- ½ cup maple syrup
- ¼ cup lemon juice
- ¼ cup soy sauce
- ¼ cup Bragg's liquid amino acids
- ¼ teaspoon dried ginger
- 2 teaspoons garlic
- 1 lemon, sliced thinly
Instructions
- Heat oven to 350*F
- Make a brine by combining lukewarm water with salt. Place salmon fillets into the brine solution. Allow to brine for 15 minutes.
- Combine all remaining ingredients.
- Line a baking dish with foil. Spray with non-stick spray.
- Remove salmon fillets from brine, dry thoroughly.
- Place salmon fillets into baking dish.
- Pour maple glaze over fillets. Top with sliced lemons.
- Bake 20 minutes or until salmon is cooked through.

Broccoli Jasmine Rice

An easy-to-side dish that covers both the starch and vegetable needs for your diet!
Ingredients
- 1 cup chopped broccoli
- 2 cups Jasmine rice
- 4 cups water
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 Tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat oven to 350*F
- Spray a 2-quart baking dish with a lid with non-stick spray.
- Pour water into the dish, add remaining ingredients, stir to combine.
- Place lid on the baking dish.
- Bake 50 minutes or until rice is completely cooked, and all water absorbed.
- Stir with a fork before serving.

Low Carb Broccoli Slaw

Serve this yummy side dish with fish, chicken, or beef!
Ingredients
- 3 cups chopped broccoli
- 12 slices bacon, chopped
- ½ cup mayonnaise
- 15 drops liquid stevia
- 1 Tablespoon apple cider vinegar
- ⅓ cup dried cranberries (or raisins)
- ½ small red onion, chopped
- ¼ cup dried, roasted sunflower seeds
- 8 ounces shredded Cheddar cheese
Instructions
- Fry the bacon until crisp. Reserve bacon fat.
- Combine the mayonnaise with liquid stevia and apple cider vinegar to make the dressing.
- Add 1 teaspoon of the reserved bacon fat.
- Taste- it should taste a bit sweet & sour. If too sweet, add a touch more acv, if too sour, add a couple more drops liquid stevia.
- In a large bowl, combine remaining ingredients.
- Toss with the dressing.
- Wrap with plastic wrap and place in the refrigerator to allow the flavors to meld for 30 minutes.
