As part of our low carb diet, we eat LOTS of hard-boiled eggs. We also raise our own chickens, so our eggs are quite fresh. Making these hard-boiled eggs was becoming more and more difficult for me.

Each time I’d peel them, it seemed like nearly half of the egg was being tossed into the compost bucket as waste. The eggs looked terrible, certainly not something I’d want to try to make into deviled eggs!
After much trial, I have finally figured out the easiest way to make hard-boiled eggs, even with very fresh eggs!
In this video, I am hard boiling eggs that were laid that morning. Can’t get any fresher than that!
Hard-Boiled Eggs- The Easy Way!
Bring a pot of water to boil. Add in 1 teaspoon salt and 1/2 cup white vinegar. Using a slotted spoon, carefully place eggs into the water. The water will no longer be boiling. Adjust the heat to a simmer.
Simmer eggs for 13 minutes. When time is up, carefully pour off hot water and run cold water over the eggs, adding ice (or a chunk of ice as I used in the video). Allow to sit until eggs are cooled off. Peeling works best at this point, but you could store these as is in the refrigerator until you need them.
With some water in the pot, attach the lid and shake the pot. The eggs will tumble around against each other, causing the shells to break.
When you begin peeling, you will notice some brown “stuff” on the shell (with brown eggs). This is the shell breaking down. It’s a good thing. If the shells are not cracked already, simply press and roll the egg around on a hard surface (or your hand as I did in the video). Then peel away.

Deviled Eggs
This is our favorite easy to make side dish for picnics!
Ingredients
- 6 hard boiled eggs
- 4 Tablespoons mayonnaise
- 1 teaspoon mustard
- 1/4 teaspoon paprika
- Salt and pepper to taste
Instructions
- Slice eggs in half, length-wise. Scoop out the yolks and place into a bowl.
- Using a fork, mash the yolks.
- Add mayonnaise, mustard, paprika, parsley, salt and pepper.
- Mix to combine.
- Spoon a bit of the mixture into each white half. Alternatively, you can scoop the mixture into a baggie, snip the corner, and squeeze the mixture into the whites.
- Sprinkle with a bit more paprika and parsley, for garnish.

will this work if I only boil them a few minutes instead of 13? Since I often boil 20+ eggs at a time, do I need to increase the salt and vinegar amounts? Thanks for your reply!
Nancy, I typically boil two dozen at a time. I honestly just pour in some salt and vinegar. I don’t typically measure. 😉
I’m not sure how well they’ll peel without being cooked thoroughly. The vinegar starts to break down the shell, making it easier to peel. Do let me know if it helps!
