While everyone is getting ready to celebrate Independence Day down in the south, up here in the north of Canada, we have our own celebrations going on. July 1st we celebrate Canada Day! Canada’s birthday, or the anniversary of the British North America Act (1867) which united 3 colonies into our now country of Canada.
Our celebrations are much the same as the ones going down on July 4th, and we’re just as patriotic in our anthems, flag-flying, celebration BBQs and fireworks. And I know BOTH the national anthems, so I can celebrate with the rest of y’all!
Last year for Canada Day I made Cherry Coke Cupcakes. I am not much of a fan of drinking coke from a can, but I have to say that cherry coke is one of my favourite sodas (if I had to drink one), and I am quite distressed that I cannot buy it here in Canada.
These cupcakes taste JUST like a nice, tall glass of coca-cola, with the added flavour of a secret cherry hidden within! If you’d rather not put the cherries in, you can of course skip them, but they’re definitely a taste kicker! The secret to the intense cola flavouring is cola extract. I found some at a local baking/kitchen supply store, and if you can’t find any in your area, you can order it online or go without. But they won’t taste the same if you omit the extract! Just warning you.
It’s a reasonable price, and SO ABSOLUTELY worth doing for these cupcakes! I had more than enough to make a double batch of cupcakes and icing.
Cherry Cola Cupcakes (makes approximately 24 cupcakes)
recipe adapted from The Cupcake Project
- 2 cups cola
- 2 ts apple cider vinegar
- 1 1/2 cup sugar
- 2/3 cups vegetable oil
- 3 1/2 ts cola extract
- 2 2/3 cups flour
- 1 1/2 ts baking soda
- 1 ts baking powder
- maraschino cherries (2-3 for each cupcake; I used my leftover cherry pie filling)
a) drop 2-3 cherries into the center of the cupcake in the pan
b) bake the cupcakes FIRST, then core the center and fill with cherries
Bake at 350 degrees for 20 minutes or until the cupcake bounces back when touched.
Cream Cheese Cola Frosting (makes enough to ice 24 cupcakes)
8 oz cream cheese
1/4 cup unsalted butter, room temp
2-4 cups icing sugar (depending on how thick/firm you want your icing)
1 ts cola extract
Beat cream cheese and butter.
If you aren’t as much of a fan of cream cheese icing as I am, try this one instead!
1/2 cup butter
1/3 cup cola
3 tablespoons cocoa
2 cups icing sugar
1 tablespoon vanilla
Bring first 3 ingredients to a boil in a saucepan over medium heat. Stir until butter melts. Remove from heat, mix in vanilla and sugar.
I wanted to dress up the cupcakes a bit, so I made my own cupcake papers using a template, red card stock, double-sided photo stickies and scrapbooking scissors.
Print out some flags – they don’t have to be Canadian flags! – attach to straws and voila! Cherry Cola cupcakes! Enjoy!
